You say Potato, I say hell yeah

Happy Monday!

So I bought like a 20 lb bag of potatoes. Now I am attempting to eat all of them. Luckily I have this guy to help me 🙂

I thought I would share some recipes that have totally worked and maybe some that need a little bit of tweaking. Mondays for the next few weeks will be devoted to potatoes, at breakfast, lunch and dinner. The first one coming at you is for breakfast but could easily be a brunch or lunch meal as it is very filling.

Zucchini and Potato Hash (Makes 6 servings-ish)

Buy this:

2 tbl spoons olive oil

1 cup onion

1 zucchini

2 potatoes (or the giant potato, pictured above)

Eggs (1-2 per serving depending on how hungry you are!)

Do this:

1. Chop up the potatoes into little cubes. Finely chop the onions (or use a nifty chopper like I have, you can be jealous). Cut the zucchini up. I like to go in fourths long ways and then chop so it makes tiny zucchini wedges – they look so cute!


2. Light amount of oil in a pan, heat around 6. Get it hot and then throw in the potatoes and onions. Cook for about fifteen minutes. Potatoes should get soft and lightly brown, if they are burning turn down the heat.

3. Put in the zucchinni and continue cooking. Since my pan is big, I push the mixture to one half of the pan.

4. On the other half of the pan, begin to fry up eggs, I have this meal with two. This could be done with over easy or sunny side up or scrambled. I am a fan of over easy!

5. Cook the potato-zucchini for another 7-8 minutes. Finish up eggs and plate!

I hope all my DC readers survived the inauguration. I went with the “hide ya kids, hide ya wife” method and stayed inside playing video games and cooking. No judgment, it was my day off! The sirens have been crazy over here since we are two blocks from the convention center. Both wishing we were going to the ball!
